Shrimp with Curry Leaves

Shrimp with Curry Leaves
Shrimp – 450 gms, shells and heads intact, rinsed
Oil – 4 tblsp
Curry Leaves – 1 cup
Small Red/Green Chillies – 5, chopped
Small Onions – 5, finely chopped
Garlic – 1 clove, finely chopped
Turmeric Powder – 1 tsp
Tamarind Extract – 1 tblsp, thick
Sugar – 1/2 tsp
Salt – 1/2 tsp or as per taste

1. Put the shrimps in a bowl.
2. Add salt and mix well.
3. Keep aside to marinate for about 5 minutes.
4. Heat 3 tblsp of oil in a pan.
5. Deep fry the curry leaves and shrimps for a minute.
6. Remove and keep aside.
7. Add the remaining 1 tblsp oil to the pan.
8. Add the chillies, small onions and garlic.
9. Cook for a minute and add the shrimps and curry leaves.
10. Add turmeric powder, tamarind extract, sugar and fry for 3 minutes.
11. Transfer to a serving bowl.
12. Serve hot with cooked rice.
