Stir-fried Broccoli and Tofu Recipe

Ingredients:
Peanut Butter – 1/2 cup
Hot Water – 1/2 cup
Vinegar – 1/4 cup
Soya Sauce – 2 tblsp
Blackstrap Molasses – 2 tblsp
Cayenne Pepper – 1 tblsp
Oil – 3 tblsp
Ginger – 2 tsp, chopped
Garlic – 4 cloves, chopped
Tofu – 450 to 500 gms, cubed
Onions – 2 cups, thinly sliced
Broccoli – 500 gms
Cashewnuts – 1 cup
Soya Sauce – 3 tblsp

Method:
1. To make the sauce, whisk the peanut butter with hot water in a small bowl.
2. Add the vinegar, soya sauce, molasses and cayenne pepper.
3. Mix well and keep aside.
4. Heat 1 tblsp of oil in a pan.
5. Stir fry half 1 tsp of ginger and 2 chopped garlic cloves.
6. Add the tofu cubes and stir-fry.
7. Add the sauce and mix well.
8. In an another pan, heat the remaining oil.
9. Saute the remaining ginger and garlic.
10. Add the broccoli, cashewnuts and soya sauce.
11. Saute for a minute or two without burning the broccoli.
12. Combine the sauce and broccoli.
13. Mix well.
14. Serve with cooked rice.
