Stuffed Capsicum in Tomato Sauce Recipe

Ingredients:
Capsicum – 8, tops cut off and seeds removed

For the Stuffing:
Oil – 1 tblsp
Mixed Vegetables – 400 to 500 gms
Potatoes – 2, boiled and mashed
Red Chilli Powder – 1/4 tsp
Cumin Powder – 1/2 tsp
Salt as per taste

For the Tomato Sauce:
Tomato Puree – 425 gms
Red Chilli Powder – 1/2 tsp
Cumin Powder – 1/2 tsp
Cinnamon Powder – 1/2 tsp
Brown Sugar – 2 tsp
Salt as per taste
Cheese – 2 tblsp (parmesan)

Method:
1. Put the capsicums in boiling water for 3 minutes.
2. Drain and keep aside.
3. Meanwhile, preheat the oven to 350C.
4. Heat oil in a pan.
5. Cook the mixed vegetables for 10 minutes until they are tender but still firm.
6. Add the red chilli powder, cumin, salt and potatoes.
7. Mix well and set aside.
8. To make the sauce, Mix the tomato puree, chilli powder, cumin, cinnamon, brown sugar and salt.
9. Boil for 10 minutes until the sauce thickens. Keep stirring.
10. Fill the capsicums with stuffing and place the cut side up in a greased baking pan.
11. Pour the hot tomato sauce over it and sprinkle with grated cheese.
12. Bake for 10 minutes.
13. Serve hot.
