Roasted Tofu with Szechuan Relish

Tofu – 400 gms, cut into 1 inch cubes
Olive Oil – 1 1/2 tblssp

For the Szechuan Relish
Tomatoes – 250 gms, diced
Cucumbers – 100 gms, diced
Red Chilli – 1, deseeded and sliced
Spring Onions – 2 tblsp, thinly sliced
Garlic – 1/2 clove, crushed
Soft Brown Sugar – 1/2 tsp
Lime Juice – 1 tblsp
Coriander Leaves – 2 tblsp, chopped
Black Pepper – 1/2 tsp, ground

1. Pour the olive oil in a large foil-lined roasting tin.
2. Spread it with a brush.
3. Arrange the tofu cubes evenly over the oil.
4. Preheat an oven to 240C.
5. Put the roasting tin in the oven and roast for about 15 to 18 minutes or until the tofu is crisp and golden brown.
6. To make the relish, mix all the ingredients in a bowl.
7. Transfer the roasted tofu on a serving dish.
8. Spoon over the relish.
9. Serve.
