Bean Thread Noodle Salad

Ingredients:
Bean Thread Noodles – 200 gms
Bean Sprouts – 2 cups
Cabbage – 3 cups, finely shredded
Red Capsicum – 1/2, cut into thin strips
Green Capsicum – 1/2, cut into thin strips
Carrot – 1, cut into thin strips
Spring Onion Greens – 2, shredded
Red Salad Onion – 1, small, finely sliced
Salad Dressing – 3 tblsp
Hot Red Chilli – 1, large, deseeded and finely sliced
Mint Leaves – few
Coriander Leaves – few

Method:
1. Soften the noodles in boiling water.
2. Drain and cut into 3 inch lenghts.
3. Blanch bean sprouts in boiling water and let it sit for10 seconds.
4. Drain and refresh in ice-cold water for 10 minutes.
5. Combine the vegetables and noodles in a bowl.
6. Add the dressing.
7. Toss well.
8. Cover and chilli for 20 minutes.
9. Garnish with chilli, mint and coriander leaves.
10. Serve.
