Palak Makkai Malai Recipe

Ingredients:
Spinach – 200 gms
Oil – 1 1/2 tblsp
Onion – 3 tblsp, chopped
Ginger Garlic Paste – 1 1/2 tsp
Sweet Corn Kernels – 1/3 cup
Garam Masala Powder – 1 tsp
Cumin Powder – 1 tsp
Red Chilli Powder – 1 tsp
Salt – 1 tsp
Butter – 1 tblsp
Cream – 3 tblsp
Coriander Leaves – 1 tblsp, chopped

Method:
1. Discard the spinach stems and wash the leaves in several changes of water.
2. Drain and chop roughly.
3. Boil the spinach leaves in 1/2 cup of water for 3 minutes.
4. Drain and keep aside till cool.
5. Blend to a smooth paste.
6. Heat oil in a pan over moderate heat.
7. Add onion and saute for 2 minutes.
8. Add ginger garlic paste and stir for 2 minutes.
9. Add the spinach and saute for 2 minutes.
10. Add corn and saute again for 2 minutes.
11. Add the masala powders and salt. Stir.
12. Add butter and stir.
13. Mix in cream and stir for 45 to 60 seconds.
14. Remove from heat.
15. Garnish with coriander leaves.
16. Serve hot.
