Kairi Khatta (Raw Mango Gravy)

Ingredients:
Green Mango – 1, raw, washed and cut into six or more pieces
Coriander Leaves – 1/2 bunch
Onions – 2 to 3, chopped into long slices
Salt as per taste
Turmeric Powder – 1/4 tsp
Jaggery – 1/2 tsp
Red Chilli Powder – 3/4 tsp
Sesame Oil – 1 tblsp

For Seasoning:
Dry Red Chillies – 1
Mustard Seeds – 1/4 tsp
Urad Dal – 1/4 tsp
Curry Leaves – 2 to 3
Oil – 1 tsp

Method:
1. Mix salt, turmeric powder, jaggery, onions, chilli powder and mango pieces.
2. Put them in a saucepan with 2 to 3 cups of water.
3. Boil till mangoes have softened.
4. Add salt and simmer for 8 to 10 minutes.
5. Garnish with coriander leaves.
6. Stir well.
7. Fry the seasoning ingredients till brown and pour it over the mango gravy.
8. Remove and serve hot with rice.
