Green Mango Rice Recipe

Green Mango – 1, large
Dry Coconut (Kopra) – 1/2
Chana Dal – 2 tblsp
Oil – 1 tblsp
Turmeric Powder – 1/4 tsp
Salt as per taste
Green Chillies – 4, chopped
Cumin Seeds – 1 tsp
Coriander Seeds – 2 tsp
Fenugreek Seeds – 1/2 tsp
Groundnuts – 2 tblsp, peeled and fried
Rice – 1 kg

For the Seasoning:
Red Chillies – 6, dry
Mustard Seeds – 1 tsp
Urad Dal – 1 tsp
Curry Leaves – 8
Asafoetida – 1/2 tsp

1. Cut the mango and coconut into small pieces.
2. Keep them separately.
3. Boil the chana dal in water till tender.
4. Dry roast the cumin seeds, coriander seeds and fenugreek seeds separately.
5. Grind each separately.
6. Powder the groundnuts.
7. Boil rice and spread on a cloth to dry.
8. Heat oil in a pan.
9. Add salt, turmeric powder, ground spices and mango pieces.
10. Add to the rice with cooked chana dal, groundnut powder, coconut and green chillies.
11. Heat oil and fry the seasoning ingredients till dark brown.
12. Add them to the rice and mix well.
13. Serve hot.
