Creamed Crab with Bamboo Shoots

Ingredients:
Crab Meat – 2/3 cup, cooked and flaked
Bamboo Shoots – 1/2 cup, cut into slices
Ginger Sherry – 1/2 tsp
Chicken Stock – 2/3 cup
Cornflour Paste – 1 tsp
Peanut Oil – 3 tblsp
Water – 2 tsp
Milk – 3 tblsp
Parsley – 1 sprig
Salt
Sugar
Ajinomoto – a pinch

Method:
1. Heat half the oil in a frying pan.
2. Stir fry the bamboo shoots.
3. Add the salt, sugar and ajinomoto.
4. Cook for 3 minutes and remove from pan.
5. Add the remaining oil.
6. When hot, add the crab meat.
7. Add the sherry, chicken stock, salt, sugar and ajinomoto.
8. Toss and stir for a few seconds.
9. Add the cornflour paste and stir.
10. When the mixture begins to boil, add the milk and continue to boil.
11. Return the bamboo shoots to the pan.
12. Mix well.
13. Garnish with the parsley.
14. Serve hot.
