Spicy Indonesian Rujak

Ingredients:

  • Pineapple – 3 thick slices, cubed
  • Bananas – 2, thinly sliced
  • Chinese or Asian Pear – 1, sliced
  • Star Fruit – 1, sliced
  • Cucumber – 1, sliced
  • Celery – 1/2, sliced
  • Red Onion – 1/2, sliced
  • Spring Onion – 1, sliced
  • Salt as per taste
  • Red Capsicum – 1/2 cup, diced
  • Bean Sprouts – 3/4 cup, blanched and drained
  • Fresh Coriander – 2 tblsp

For the Dressing:

  • Soft Brown Sugar – 2 tblsp
  • Lemon Juice – 2 to 4 tsp
  • Tamarind Concentrate – 2 tsp
  • Sweet Soy Sauce – 3 tsp
  • Water – 1 1/2 tblsp

Method:

  1. Mix the pineapple, banana, pear, star fruit, cucumber, celery, onion and spring onion in a bowl.
  2. Sprinkle with salt.
  3. To make the dressing, whisk the sugar, lemon juice and tamarind in a small bowl with the sweet soy sauce and water.
  4. Pour the dressing over the salad.
  5. Add capsicum, bean sprouts and herbs.
  6. Toss lightly.
  7. Leave it to marinate for about 20 minutes before serving in bowls.
