Tri-Spiced Chops Recipe

Mutton Chops – 500 gms
Oil – 6 tblsp
Onion – 1/2, medium and sliced
Ginger Garlic Paste – 2 to 3 tsp
Red Chilli Powder – 1 1/2 tsp
Cumin Powder – 1 tsp
Black Pepper Powder – 2 tsp
Garam Masala Powder – 1 tsp
Salt – 1 to 2 tsp
Yogurt – 2 tblsp
Juice of 1/2 Lime

Grind to a Puree:
Onion – 1, medium and roughly chopped
Coriander Leaves – 2 tblsp, roughly chopped
Green Chillies – 5, roughly chopped

1. Wash the mutton chops and set aside to drain.
2. Heat oil in pan over moderate heat.
3. Fry the onion till golden brown.
4. Add the ginger garlic paste and stir vigorously for about 5 minutes while sprinkling in water as required.
5. Add the red chilli powder, cumin powder, black pepper powder, garam masala and salt.
6. Fry for about 5 minutes.
7. Pour in the pureed ingredients.
8. Add the mutton chops and cook for about 30 minutes till the meat is tender.
9. Cover the pan with a lid.
10. Add the yogurt and lime juice.
11. Let it simmer till the gravy thickens and oil separates.
