Ingredients:
Milk – 5 cups
Green Cardamom Powder – 1/2 tsp
Saffron – a few strands
Sugar – 1 1/2 cups
Clarified Butter – 1 cup
Bread Slices – 8

For the Thickened Milk (rabari)
Milk – 10 cups
Sugar – 1/2 cup
Green Cardamom Powder – 1/2 tsp
Saffron – a few strands
Almonds – 2 tsp, slivered
Pistachios – 2 tsp, slivered

Method:
1. Bring the milk to a boil in a heavy bottomed pan.
2. Add the green cardamom powder and saffron.
3. Remove from the heat, add the sugar. Keep aside.
4. Heat the clarified butter in a pan.
5. Fry the slices of bread lightly.
6. Remove, drain the excess oil.
7. Soak the fried bread in the milk mixture for 10 minutes.
8. For the rabari, heat the milk and cook till it is reduced to 1/3rd.
8. Stir in the sugar, green cardamom powder and saffron.
9. Remove from the heat and keep aside to cool.
10. Carefully lift the slices of bread from the milk and place on a serving platter.
11. Pour the rabari on top and garnish with almonds and pistachios.
12. Serve chilled or at room temperature.
