Dahi Pakori

Ingredients:
Split Green Gram – 1/2 cup
Black Gram – 1/2 cup
Ginger – 1, grated, 1 inch piece
Bicarbonate of Soda – a pinch
Salt to taste
Vegetable Oil for frying
Yoghurt – 2 1/2 cups, strained
Salt to taste
Red Chilli Powder – 1 tsp
Cumin Seeds – 1 tsp, roasted and powdered
Tamarind Chutney – 100 gms
Green Coriander Relish – 2 tbsp

Method:
1. For the pakoris, after soaking the green and black grams for 2 hours grind to a smooth paste.
2. Add the remaining ingredients.
3. Whip till the batter is smooth, and of dropping consistency.
4. Heat the oil in a pan.
5. Carefully drop a tablespoonful of the batter into the hot oil.
6. Fry till golden brown.
7. Remove with a slotted spoon and immerse the dumplings in salted water for 5-7 minutes.
8. Repeat till all the batter is used up.
9. Remove the soaked dumplings. 
10. Squeeze out the excess water and arrange them in a bowl.
11. Mix the salt with the yoghurt and pour over the dumplings.
12. Sprinkle the spices, tamarind and green coriander relish.
13. Serve.
