Sesame Potato Rice

Rice – 1 cup
Oil – 2 tblsp
Garlic – 4 cloves, crushed
Ginger – 1/2 inch piece, crushed
White Sesame Seeds – 2 tblsp, roasted and crushed
Turmeric Powder – 1/2 tsp
Red Chilli Powder – 1/2 tsp
Potatoes – 2, medium, diced
Tamarind Pulp – 1 tblsp
Green Chillies – 2, cut into 2 to 3 pieces
Salt – 1 tsp

1. Wash rice and soak in water for 15 minutes.
2. Heat oil in a heavy based pan over moderate heat.
3. Add garlic, ginger, sesame, turmeric powder, red chilli powder and potatoes and fry for a minute.
4. Pour in 3 tblsp of water and simmer over low heat for about 5 minutes.
5. Mix in tamarind pulp.
6. Simmer for 5 minutes and add chillies.
7. Drain rice and add to pan with salt.
8. Stir till translucent.
9. Mix in 2 cups of water.
10. Cook rice for 10 to 15 minutes, till water is absorbed and rice is tender.
11. Stir lightly.
12. Serve hot.
