Vegetables in Spicy Almond Sauce

Ingredients:
Vegetables – 2 cups (baby corn, broccoli, carrots), cut into wedges (parboiled)
Fresh Red Chillies – 1 tsp, sliced
Almonds – 1/2 cup, blanced, peeled and sliced
Bean sprouts – 1/4 cup
Chinese white sauce – 2 cups
Oil – 1 tblsp
Salt – to taste

For Chinese white sauce:
Onions – 1/2 cup, finely chopped
Ginger – 2 tsp, chopped
Garlic – 2 tsp, chopped
White wine – 1/2 cup
Cornflour – 2 tblsp, mixed with 3 cups of clear vegetable stock
Sugar – a pinch
Oil – 1 tblsp
Salt – to taste

Method:
1. Heat the oil, add the fresh red chillies, bean sprouts and vegetables and saute for a few seconds.
2. Add the chinese white sauce and salt and bring to a boil.
3. Serve immediately.

Method for making Chinese white sauce:
1. Heat the oil in a pan, add the onions, ginger and garlic and saute till the onions are translucent.
2. Add the wine and cook on a high flame for a few seconds.
3. Add the cornflour paste and cook till the sauce thickens.
4. Add sugar, salt and mix well and use as required.
