Buttermilk Cinnamon Coffee Cake

A simple, delicious and tasty cake for breakfast, lunch or dinner.
Buttermilk Cinnamon Coffee Cake

Buttermilk – 2 cups
Plain Flour – 4 1/2 cups
Salt – 1 tsp
Cinnamon Powder – 1 1/4 tblsp
Ginger Powder – 1/2 tsp
Brown Sugar – 2 cups
White Sugar – 1 1/2 cups
Oil – 1 1/2 cups
Walnuts – 2 cups, chopped
Baking Soda – 2 tsp
Baking Powder – 2 tsp
Eggs – 2 or 3 (depending on size), beaten

1. Mix the flour, salt, half of the cinnamon powder, ginger powder, brown sugar, white sugar and oil in a bowl.
2. Remove 1 1/2 cups of this mixture and transfer to an another bowl.
3. To one portion, add the walnuts, remaining cinnamon powder and mix well.
4. To the other portion, add the baking soda, baking powder, buttermilk and eggs.
5. Mix well without any big lumps.
6. Pour this into a greased cake tin and top up with the reserved flour-walnuts mixture.
7. Spread it evenly and place it in a preheated oven at 350F/175C.
8. Bake for 40 to 50 minutes or until a skewer inserted into the center comes out clean.
9. Remove and cool.
10. Cut it into slices and serve.
11. Store any in an airtight container.
