Stuffed Spicy Mushrooms

Ingredients:
Button Mushrooms – 13 to 15, cleaned, washed, stems removed
Garlic – 1 tblsp, finely chopped
Red Chillies – 1 tsp, finely chopped
Salt as per taste
Vinegar – 2 tsp
Olive Oil – 2 tsp
Oil – 1 tsp
Cucumber – 1, finely chopped
Celery – 1 tblsp, finely chopped
Red Capsicum – 1, finely chopped, seeds removed
Sesame Seeds – 1 tsp
Garlic – 1 tsp, lightly fried
Onion – 1, finely chopped
Cream Cheese – 1/4 cup
Curd – 2 tblsp
Coriander Leaves – handful, finely chopped

Method:
1. Combine the red chillies, salt, vinegar, olive oil and 1 tblsp garlic in a bowl.
2. Add the mushrooms and mix well.
3. Marinate for 30 to 45 minutes.
4. Heat 1 tsp oil in a pan.
5. Place the mushrooms upside down and cook for 2 minutes.
6. Flip them over and cook for another 2 minutes.
7. Mix the cucumbers, celery, capsicums, fried garlic, sesame seeds, onions, cream cheese and curd in a bowl.
8. Add salt and mix again.
9. Stuff the mushrooms with this mixture.
10. Garnish with coriander leaves.
11. Serve.
