Small Onion Sambar Recipe

A popular South Indian sambar variety best served with hot rice.
Sambar Onions (Shallots)
Small Onions (Sambar Onions) – 20, chopped
Garlic – 5 cloves, peeled
Tomato – 1, chopped
Green Chillies – 2, chopped
Tamarind Extract – 1 to 1 1/2 cups
Sambar Powder – 2 1/2 tsp
Oil as required
Salt as per taste
Fenugreek Seeds – little
Mustard Seeds – 1/8 tsp
Saunf – little
Curry Leaves – few

1. Heat 1 tsp oil in a pan.
2. Fry the mustard seeds, fenugreek seeds, saunf and curry leaves for 30 to 45 seconds.
3. Add the onions, garlic, green chillies and tomatoes.
4. Saute well for 2 to 3 minutes.
5. Add the tamarind extract, sambar powder and bring to a boil.
6. When the oil floats to the top, remove from flame.
7. Serve hot with rice.
