Coconut Milk Aapam

Ingredients:
Parboiled Rice – 1 1/2 cup
Raw Rice – 1/2 cup
Javvarisi (Sago) – 1 tsp
Fenugreek Seeds – 1 tsp
White Urad Dal – 4 tsp
Jaggery – 2 cups, grated
Coconut – 1, medium
Oil as required

Method:
1. Soak the parboiled rice, raw rice, sago, urad dal and fenugreek seeds for 2 hours.
2. Drain and grind to a thick batter.
3. Keep aside for 6 hours.
4. Grate the coconut and extract 3 cups of coconut milk.
5. Grind the jaggery and add to the batter.
6. Mix well till it reaches a dosa batter consistency.
7. Heat a tawa over medium flame.
8. Pour a ladleful of the batter and apply a little oil around the edges.
9. Cover with a lid and cook for 2 minute.
10. Remove and transfer to a serving plate.
11. Add 2 tsp coconut milk on top and serve.
