Bengali Mixed Vegetables
Ingredients:
Drumsticks – 2, cut into one inch pieces
Brinjals – 50 gms, chopped
Raw Bananas – 1 to 2, peeled, chopped
Potatoes – 1, peeled, chopped
Bitter Gourd – 1, chopped
Parval – 3, lightly scraped and chopped
Five Spice Powder (Panch Phoran) – 1/2 tsp
Mustard Oil – 1 tblsp
Wheat Flour – 1 tblsp
Milk – 1 cup
Cream – 1/2 cup
Salt as per taste

Method:
1. Heat oil in a pan.
2. Add the five spice powder and allow it to splutter.
3. Add the potatoes and fry for 20 seconds.
4. Add the brinjals, bananas, parval and drumsticks.
5. Cook for 2 minutes and add the bitter ground pieces.
6. Add salt and 1/2 to 3/4 cup of water.
7. Stir well and cover the pan with a lid.
8. Cook till the vegetables are tender.
9. Mix the wheat flour with milk and ensure no lumps are formed.
10. Add this to the vegetables and bring to a boil.
11. When the gravy starts to thicken, remove from flame and add the cream.
12. Serve hot with rice or roti.
