Rice Noodles and Shrimp Salad

Rice Noodles and Shrimp Salad
Shrimps – 225 gms, peeled, deveined
Rice Noodles – 100 gms, cooked as per packet instructions
Fish Sauce – 2 tblsp + 1 tsp
Juice of 2 small Lime + Zest of 1 Lime
Oil – 1 1/2 tblsp
Jalapeno – 1/4, finely sliced, seeds removed
Sugar – 1/2 tblsp
Garlic – 1 clove, grated
Lettuce Leaves – few, finely sliced
Carrot – 1, coarsely grated
Mixed Herbs – 1 1/4 cup, chopped
Bean Sprouts – 1/2 cup

1. Drain the noodles and rinse well. Then cut into small pieces and keep aside.
2. Combine 2 tblsp fish sauce, juice of 1 lime, 1 tblsp oil, jalapeno, sugar, 1/2 garlic love and 1/4 cup of water.
3. Mix well and keep aside.
4. Add the lime zest and remaining lime juice, remaining garlic, 1/2 tblsp oil and 1 tsp fish sauce.
5. Add the shrimps and toss well to coat.
6. Heat a pan over medium flame.
7. Fry the shrimps until lightly browned, about 2 minutes on each side.
8. Transfer the noodles, lettuce, carrots, mixed herbs and bean sprouts to a large bowl.
9. Add the noodles and drizzle the dressing on top.
10. Serve.
