Smoked Trout with Pears

  • Watercress – 1 1/4 cups
  • Radicchio – 1 head, torn into pieces
  • Smoked Trout Fillets – 4, skinned
  • Ripe Pears – 2
  • Lemon Juice – 2 tblsp
  • Extra Virgin Olive Oil – 2 tblsp
  • Sour Cream – 3 tblsp
  • Creamed Horseradish – 2 tsp
  • Salt as per taste
  • Pepper as required
  • Whole Wheat Bread – thinly sliced and buttered


  1. Place the watercress and radicchio in a bowl.
  2. Cut the trout fillets into thin strips and add to the bowl.
  3. Halve and core the pears, then slice thinly.
  4. Place in a separate bowl, add 4 tsp of lemon juice and toss to coat.
  5. Add the pears to the salad.
  6. To make the dressing, mix the remaining lemon juice and the olive oil together in a bowl, then season to taste with salt and pepper.
  7. Pour the dressing over the salad and toss well.
  8. Transfer to a large salad bowl.
  9. Mix the sour cream and horseradish together in a separate bowl until thoroughly blended.
  10. Pour into a small serving bowl.
  11. Serve the salad with buttered bread.
