Sookhi Dal Amritsari
Urad Dal – 1/2 cup, soaked in water
Onion – 1, small, chopped
Tomatoes – 1, chopped
Green Chillies – 1, medium, chopped
Garam Masala Powder – 1/4 tsp
Red Chilli Powder – 1/4 tsp
Coriander Leaves – 1/2 tblsp, chopped
Lemon Juice – 1/4 tsp
Salt as per taste
Ginger – 1 one inch piece, julienned
Turmeric Powder – a pinch
Oil – 1 tblsp
Asafoetida Powder – a small pinch
Cumin Seeds – 1/2 tsp

1. Heat a pan over medium flame.
2. Add the urad dal, 3 cups of water, salt, turmeric powder and 1/2 of the ginger juliennes.
3. Increase the flame to high and bring to a boil.
4. Reduce heat and cook till the dal is soft.
5. Meanwhile in another pan heat oil over moderate flame.
6. Add asafoetida powder, cumin seeds and onions.
7. Saute till onions turn soft and light pink.
8. Add the remaining ginger , green chillies and tomatoes.
9. Stir and add red chilli powder.
10. Cook till oil rises to the top.
11. Strain the dal and add to the masala.
12. Mix well.
13. Add salt, garam masala powder, coriander leaves and lemon juices.
14. Cook for a minute or two.
15. Serve hot.
