Chickpea Curry

Oil – 2 tblsp
Onions – 2, thinly sliced
Chickpeas – 1 1/4 cup, dried, presoaked and cooked (or 1 can Chickpeas, drained and rinsed)
Potatoes – 2, peeled, cubed, boiled
Red Chilli Powder – 1/2 tsp
Garam Masala Powder – 1/2 tsp
Ground Coriander – 1/2 tsp
Ground Cumin – 1/4 tsp
Tomato – 1, thinly sliced
Salt as per taste
Water – 1/4 cup
Lime Juice – 1 tblsp
Plain Yogurt – 1/4 cup
Coriander Leaves – 2 tblsp, chopped

1. Heat oil in a large pan.
2. Saute the onions for 5 minutes until soft.
3. Add the chickpeas, boiled potatoes, red chilli powder, garam masala powder, coriander, cumin, lime juice, salt and water.
4. Simmer for 5 to 7 minutes.
5. Transfer to individual serving bowls.
6. Garnish with 1 tblsp yogurt and a slice of tomato.
7. Sprinkle some coriander leaves on top.
8. Serve as is or with plain rice.
