Chicken Rasam

Ingredients:
Chicken with bones – 500 gms
Onion – 1, finely chopped
Tomato – 1, finely chopped
Garlic – 3 cloves, minced
Turmeric Powder – 1/2 tsp
Red Chilli Powder – 1 tsp
Cumin Powder – 1 tsp
Coriander Leaves – 1/4 cup, chopped

For the Spice Powder:
Black Peppercorns – 5
Cumin Seeds – 2 tsp

Grind to a fine consistency and set aside.

For Tempering:
Oil – 2 tsp
Curry Leaves – 5
Fennel Seeds – 1/2 tsp
Cumin Seeds – 1/2 tsp

Method:
1. Clean the chicken, wash and cut into small pieces. Set aside.
2. Put the oil in a pan over medium heat.
3. When the oil is hot add the curry leaves, fennel seeds and cumin seeds.
4. Stir for a moment and add the onion, tomato and garlic.
5. Cook till the onion is soft.
6. Add the chicken and turmeric powder.
7. Stir-fry for a couple of minutes.
8. Mix in chilli powder, cumin powder and the ground spice powder with 3 cups of warm water.
9. Cook covered with medium heat till the chicken is tender.
10. Add coriander leaves and serve warm.
