Cantonese Prawns Recipe

Ingredients:
Prawns – 450 gms, peeled
Fish – 100 gms, chopped
Oil – 3 tblsp
Garlic – 2 cloves, finely crushed
Ginger – 2 inch piece, finely chopped
Spring Onions – 2, chopped
Eggs – 2, lightly beaten

For Sauce:
Dry Sherry – 1 tblsp
Soya Sauce – 1 tblsp
Sugar – 1 tsp
Water – 1 1/2 cups
Cornflour – 1 tblsp, mixed with 2 tblsp water

Method:
1. Heat 1 tblsp of oil in a pan.
2. Add the garlic and fry for a minute.
3. Add the prawns and stir-fry for 4 to 5 minutes.
4. Remove and keep aside.
5. Add the remaining oil to the pan.
6. Fry the ginger and fish for 3 to 4 minutes.
7. Mix together all the sauce ingredients and add to the fish.
8. Fry for 60 seconds.
9. Add the onions and stir-fry for another 60 seconds.
10. Add the beaten eggs and cook for 2 minutes till it sets.
11. Spoon the mixture over the prawns.
12. Serve hot.
