Spinach Chutney Rice

Ingredients:
Rice – 1 cup
Spinach (Murungakkai Keerai) – 2 cup
Sambar Onion – 6 to 8
Garlic – 6 flakes
Green Chilli – 5
Red Chilli – 4
Coconut – 1/2 cup, grated
Tamarind Extract – 3/4 cup (adjust as required)
Salt as per taste

For Garnishing:
Oil – 2 tsp
Urad Dal – 3 tsp

Method:
1. Heat oil in a pan.
2. Add mustard seeds, urad dal and rice.
3. Mix well and keep aside.
4. In an another pan, heat oil.
5. Add red chilli, sambar onion, garlic, green chilli and fry little.
6. Add grated coconut and add all the chopped spinach leaves.
7. Mix well and fry nicely.
8. Add tamarind extract and salt.
9. Remove from heat and allow it to cool.
10. Grind this in a mixie to a thick consistency.
11. Mix this paste with the rice.
12. Serve with appalam or papad.
