Chicken Mao

Ingredients:
Chicken – 250 gms
Green Chillies – 50 gms
Capsicum – 100 gms, seeded and sliced
Chilli Sauce – 1 tblsp
Green Onions – 3, sliced
Ginger – 1/2 inch piece, shredded
Brandy – 1 tblsp
Soya Sauce – 1 tblsp
Sugar – 1 tblsp
Mushrooms – 50 gms, shredded
Cornflour – 1 tblsp
Salt as per taste
Pepper as required
Egg White – 1

Method:
1. Cut the chicken into cubes.
2. Mix with the egg white, half the cornflour and salt.
3. Deep fry until golden.
4. Drain.
5. Heat 3 tblsp of oil.
6. Fry the capsicums, diced chillies, mushrooms, green onions and ginger for 3 to 4 minutes.
7. Add the chicken.
8. Mix well.
9. Add the chilli sauce, soya sauce, brandy and sugar.
10. Mix the remaining cornflour in 1/4 cup chicken stock or water.
11. Put into the cooked chicken.
12. Cook till thick.
13. Serve hot.
