Ingredients

  • 1/2 kg Pomfret (cleaned and gashed for stuffing)

For the Marinade:

  • 9 Red Chillies
  • 1/8 tsp Pepper Powder
  • 1/8 tsp Cumin Seeds
  • 1/8 tsp Fenugreek Seeds
  • 1/8 tsp Mustard Seeds
  • 1/4 tsp Turmeric Powder
  • 4 cloves Garlic
  • Ginger (1/2 inch piece)
  • 5 Button Onions
  • Salt to taste
  • 1 tbsp Lime Juice

For the Stuffing:

  • 2 tbsp Refined Vegetable Oil - 2 tbsp
  • 1 cup Onion (sliced)
  • 1/4 cup Green Chillies (chopped)
  • 1/2 tsp Ginger (chopped)
  • 2 tbsp Tomato (chopped)
  • Salt to taste
  • 1/8 tsp Sugar
  • White of One Egg
  • Refined Vegetable Oil for frying

Instructions

  • Grind the ingredients for the marinade.
  • Rub 2 tbsp marinade evenly over the fish and keep covered in a cool place for 2 to 3 hours.
  • Heat oil in a pan and fry onion, green chillies, and ginger until onions are light brown.
  • Add tomatoes and sauté until dry.
  • Add salt and sugar and mix well.
  • Stuff the fish with this mixture.
  • Seal the opening with beaten egg white.
  • Heat oil in a skillet and fry the fish over low heat.
