Ingredients:
Lamb – 1 1/4 cups, minced
Lamb Kidney – 3/4 cup, finely chopped
Lamb Liver – 3/4 cup, finely chopped
Salt – 1/2 tsp
Red Chilli Powder – 1/2 tsp
Garam Masala – 1 tsp
Fenugreek Powder – a pinch
Ginger Garlic Paste – 3 tsp
Green Coriander – 2 tsp, chopped
Green Chillies – 1 tsp, chopped
Chicken – 2 1/2 cups, minced
White Pepper Powder – 1/2 tsp
Fenugreek Powder – a pinch
Butter for basting – 4 tsp

Method:
1. Mix together the lamb mince, kidney, liver, salt, red chilli powder, 1/2 tsp garam masala, fenugreek powder, 2 tsp ginger garlic paste, 1 tsp green coriander and green chillies.
2. Keep aside.
3. Skewer the mince- mixture and roast in a charcoal frill for 8 to 10 minutes.
4. Remove and place the skewers upright to allow excess liquids to drip.
5. Keep aside for 3 to 5 minutes.
6. Mix chicken mince along with all the other ingredients and coat the lamb kebabs evenly with this mixture.
7. Roast again for 5 to 6 minutes.
8. Baste with butter.
9. Remove from skewers.
10. Serve with green salad.
