Grilled Tofu Curry Recipe

Delicious curry with tofu. Serve hot with rice or naan.
Tofu Curry
Ingredients:
Tofu – 250 gms, firm, drained, dried
Sea Salt – 1/4 tsp
Oil – 1 tblsp
Turmeric Powder – a pinch
Coconut Milk – 1/2 cup
Red Curry Paste – 1 tblsp
Water – 2 to 3 tblsp
Light Brown Sugar – 1/2 tblsp
Fish Sauce – 1/2 tblsp
Green Peas – 1/2 cup
Red Capsicum – 1/2 cup, sliced
Lime Juice – 1/2 tblsp
Basil Leaves – 1/4 cup, chopped
Lime Zest – 1/2 tsp, grated
Coriander Leaves – 1/2 tblsp, finely chopped

Method:

1. Sprinkle salt on the tofu pieces and keep aside.
2. Mix turmeric powder and oil in a bowl.
3. Brush this on the tofu and keep aside for a few minutes.
4. Heat 2 tblsp of the coconut milk in a pan over medium flame.
5. Keep stirring till it is reduced by half and starts to thicken.
6. Add the curry paste and simmer for 45 seconds.
7. Add the remaining coconut milk, water, sugar and fish sauce.
8. Bring to a boil and reduce flame to low.
9. Simmer for 4 to 5 minutes.
10. Meanwhile, heat a small frying pan over medium flame.
11. Saute the tofu till golden brown.
12. Transfer to a serving plate.
13. Add the green peas and capsicum to the curry.
14. Cook for 30 seconds and add the lime juice and basil leaves.
15. Simmer for another 30 to 45 seconds.
16. Then pour the curry over the tofu.
17. Garnish with lime zest.
18. Serve.

Tip: Substitute soy sauce for fish sauce, if desired.
