Hot and Sour Vegetable Salad Recipe

Ingredients:

  • Vegetable Oil – 2 tblsp
  • Chili Oil – 1 tblsp
  • Onion – 1, sliced
  • Ginger – 1 one inch piece, grated
  • Broccoli – 1 small head, cut into florets
  • Carrots – 2, cut into short thin sticks
  • Red Bell Pepper – 1, seeded and cut into squares
  • Yellow Bell Pepper – 1, seeded and cut into strips
  • Snow Peas – 50 gms, trimmed
  • Baby Corn – 50 gms, halved

For the Dressing:

  • Vegetable Oil – 2 tblsp
  • Chili Oil – 1 tsp
  • Rice Wine Vinegar – 1 tblsp
  • Juice of 1 Lime
  • Fish Sauce – 1/2 tsp

Method:

  1. Heat the oil in a large pan.
  2. Sauté the onion and ginger for 2 minutes until they start to soften.
  3. Add the vegetables and stir-fry for 3 minutes, until they have softened slightly.
  4. Remove from the heat and set aside.
  5. Mix the dressing ingredients together.
  6. Transfer the vegetables to a serving plate.
  7. Drizzle the dressing over.
  8. Serve immediately.
