Luqmi Recipe

For the Filling:
Ghee – 1/2 cup
Onion – 2, finely sliced
Turmeric Powder – a pinch
Red Chilli Powder – 1 tsp
Ginger Garlic Paste – 1 tsp
Minced Meat – 250 gms
Cardamoms – 3 to 4
Cloves – 4 to 6
Cinnamon – 1 inch stick, powdered
Salt – 1 tsp
Green Chillies – 3 to 4, chopped
Coriander Leaves – 1 bunch, chopped
Juice of 1 to 2 limes

For the Pastry:
Wheat Flour – 4 cups
Ghee – 2 tblsp
Milk – 1/4 cup
Oil for frying

1. In a pan add onion, turmeric, chilli powder, ginger and garlic paste.
2. Fry them lightly.
3. Add mince and brown well.
4. Add the powdered cinnamon, cloves and cardamoms.
5. Cook on low heat.
6. Add a little water till the mince is cooked.
7. Add salt, green chillies, coriander and lime juice.
8. Keep aside.
9. Mix flour with 1 tblsp ghee and milk, adding water if required, to make a pliable dough.
10. Knead well.
11. Roll out dough on a floured surface.
12. Cut into 1 1/2 inch square strips.
13. On each strip, put a spoonful of cooked mince in the centre.
14. Cover with another square.
15. Seal the sides by dampening the inner edges of the square.
16. Press down to seal.
17. Fry this in hot oil over medium flame.
18. Serve hot.

This can also be kept and reheated but the taste would not be the same.
