Chow Chow Kari

Ingredients:
Green Squash (Chow Chow) – 2, medium
Curry Leaves – few
Salt as per taste
Mustard Seeds – 1/4 tsp
Urad Dal – 1 tsp
Oil – 1 tsp
Coconut – 3 tblsp, grated
Red Chilli – 1
Cumin Seeds – 1 tsp

Method:
1. Heat 1/2 tsp of oil.
2. Fry the red chilli for 5 to 10 seconds.
3. Grind it very coarsely with coconut and cumin seeds adding 1 to 2 tsp of water.
4. Keep aside.
5. Peel the chow chow and cut it into half.
6. Remove and discard the inner seeds and chop into medium square pieces.
7. Heat 1/2 cup of water in a deep pan with salt.
8. Add the chow chow pieces.
9. Cover and cook for 3 minutes over moderate heat. Keep aside.
10. Heat the remaining 1/2 tsp of oil and fry the mustard seeds and urad dal till the dal is golden.
11. Add the curry leaves, cooked chow chow and the masala paste.
12. Stir for 20 seconds.
13. Remove and serve.
