Khatta Mitha Karela

Ingredients:
Bitter Gourd – 250 gms, small, peeled
Oil – 2 tblsp

For the Masala:
Oil – 30 gms
Green Chilli Paste – 1 tblsp
Coriander Powder – 1 tblsp
Dry Mango Powder – 1 tblsp
Red Chilli Powder – 1 tsp
Powdered Sugar – 25 gms
Asafoetida – 1/2 tsp
Turmeric Powder – 1/2 tsp
Salt to taste

Method:
1. Slit the bitter gourd lengthwise.
2. Sprinkle 1 tblsp of salt on the bitter gourd and keep aside for an hour.
3. Squeeze the water out of the bitter gourd.
4. Boil 1 litre of water, add the bitter gourd and boil for 5 minutes till almost done.
5. Drain the water and keep the bitter gourd aside.
6. Mix all the spices and stuff the karelas with the masala.
7. Heat oil.
8. Add the stuffed karela and fry gently. Cook for 5 minutes.
9. Serve hot.

Note: This can be stored in a fridge for 4-5 days.
