Sweet and Sour Rice

Ingredients:
For the Rice:
Paneer – 200 gms, cut into cubes
Boiled Rice – 3 cups
Onion – 1 cup, chopped
Capsicum – 1 cup, cut into strips
Spring Onion – 1 cup, chopped
Garlic Paste – 1 tsp
Oil – 6 tbsp
Ajinomoto – 1/4 tsp
Salt as per taste
Ground Pepper
Parsley – chopped, to garnish

For the Sweet and Sour Sauce:
Cornflour – 1 1/2 tsp
Tomato Sauce – 3 tbsp
Vinegar – 2 tbsp
Oil – 1 tbsp
Ajinomoto – 1/4 tsp
Parsley Leaves – 1/2 cup
Vegetable Stock – 1/2 cup

Method:
1. Heat the oil.
2. Fry the onion, garlic, capsicum and spring onion.
3. Add the paneer cubes and saute for a minute.
4. Add the rice to it and mix well.
5. Add the salt, pepper and ajinomoto and mix again.
6. Keep aside.
7. To make the sweet and sour sauce, mix all sauce ingredients and cook till the sauce thickens.
8. Pour it on the fried rice and mix well.
9. Garnish with chopped parsley.
10. Serve hot.
