Vegetable Somas

Ingredients:
Potato – 4
Green Peas – 50 gms
Onion – 3
Beans – 25 gms
Carrot – 4
Green Chilli – 4
Mint Leaves – 1 tblsp, chopped
Coriander Leaves – 2 tsp, chopped
Curry Leaves – 1 tsp, chopped
Maida – 2 cups
Ghee – 2 tsp
Mustard Seeds – 1 tsp
Urad Dal – 1 tsp
Ginger – a small piece
Oil – for deep frying
Salt to taste

Method:
1. Cook potatoes.
2. Peel skin and mash it well.
3. Chop onion, beans, green chillies, ginger and carrot into small pieces.
4. Pour oil in a pan.
5. Add mustard seeds and let it splutter.
6. Add urad dal and green chilli.
7. Put the chopped vegetables in it along with mashed potatoes.
8. Add salt, mint leaves, coriander leaves and curry leaves.
9. Fry the potato.
10. Sift the maida flour.
11. Make dough of maida with some water, pinch of salt and ghee.
12. Make small rectangle shaped dough.
13. Put the vegetables in it.
14. Close the edges with the help of water.
15. Deep fry vegetables somas.
16. Serve with sauce or chutney.
