Ingredients:
Potatoes – 2, medium
Beaten Rice (Poha) – 250 gms
Green Chillies – 2
Turmeric Powder – 1/2 tsp
Salt – 1 1/2 tsp
Lime Juice – 2 tsp
Coriander Leaves – 1/2 cup, chopped
For Tempering:
Oil – 1 tblsp
Mustard Seeds – 1/2 tsp
Cumin Seeds – 1/2 tsp
Method:
1. Wash the potatoes.
2. Peel and cut them into small cubes.
3. Wash the poha, squeeze out all the water and spread it out on a plate.
4. Chop the green chillies fine.
5. Heat the oil in a kadai over moderate heat.
6. Add mustard seeds and cumin seeds.
7. When they start to crackle, add the green chillies and turmeric.
8. Toss them for a few minutes.
9. Mix in the potatoes and stir for a few more minutes.
10. Lower heat, cover pan and cook until the potatoes are tender.
11. Add the poha and salt.
12. Toss briskly.
13. Add the lemon juice.
14. Garnish with coriander leaves.
15. Mix well and remove from heat.
16. Serve.
