Stir Fried Abalone with Black Mushrooms

Ingredients:
Abalone – 300 gms, washed, sliced thickly
Black Mushrooms – 200 gms
Oil – 2 tsp
Garlic – 15 gms, chopped
Chicken Stock – 1 cup
Soy Sauce – 4 tsp
Oyster Sauce – 2 tsp
Salt to Taste
Cornflour – 2 tsp
Sesame Oil – 2 tsp
Chinese Wine – 2 tsp
Spinach – 300 gms, boiled

Method:
1. Heat the oil in a kadai.
2. Add the garlic and saute.
3. Stir in the chicken stock, soy sauce, oyster sauce and salt.
4. Mix well and cook for 5 minutes.
5. Add the abalone along with black mushrooms.
6. Stir in the cornflour dissolved in little water to thicken.
7. Cook until the abalone is tender.
8. Stir in the sesame oil and Chinese wine and remove from the heat.
9. Spread the boiled spinach on a serving platter and pour the cooked abalone over it.
10. Serve hot.
