Chutneyed Potatoes Recipe

Ingredients:
Potatoes – 600 gms, peeled
Mint – 1 tsp, fresh
Lemon Juice – 2 tbsp
Green Chillies – 3
Green Coriander – 1/2 cup chopped
Oil – 1/2 cup
Ginger Paste – 2 tsp
Garlic Paste – 2 tsp
Cumin Powder – 1 tsp
Coriander Powder – 1/2 tsp
Red Chilli Paste – 1 1/2 tsp
Salt to taste

Method:
1. Blend together fresh mint, lemon juice, green chillies and green coriander into a puree.
2. Heat oil in a heavy bottomed pan.
3. Add ginger garlic pastes and potatoes.
4. Stir fry for 2 to 3 minutes.
5. Add cumin powder, coriander powder and red chilli paste.
6. Stir fry.
7. Add salt and 250ml water.
8. Bring to a boil and simmer till the potatoes are cooked.
9. Add the blended puree.
10. Stir fry for 4 to 5 minutes.
11. Add salt if necessary.
12. Serve at once.
