Khatu Meethu Stew (Sweet and Sour Vegetable Stew) Recipe

Ingredients:
Green Peas – 250 gms, shelled
French Beans – 150 gms, trimmed, cubed
Carrots – 4, peeled, cut into pieces
Cauliflower – 300 gms
Potatoes – 3, large, peeled, cut into cubes
Yam – 300 gms, peeled, cut into cubes
Sweet Potatoes – 2, medium, peeled, cut into pieces
Baby Onions – 300 gms, peeled
Vegetable Oil – 1/2 cup
Onions – 3, sliced
Tomatoes – 3, finely chopped
Green Chillies – 3 to 4, finely chopped
Green Coriander – 3 tbsp, finely chopped
Mint Leaves – 3/4 cup, finely chopped
Garlic – 1 pod, finely chopped
Vinegar – 3 tbsp
Sugar – 2 tbsp
Salt to taste

Method:
1. Heat the oil in a pan.
2. Shallow fry the green peas, french beans, carrots, cauliflower, potatoes, yam, sweet potatoes and baby onions separately.
3. Heat 2 tbsp oil in a pan.
4. Saute the onions till light brown.
5. Add the remaining vegetables.
6. Simmer for 3 to 4 minutes.
7. Mix in the fried vegetables.
8. Add the remaining ingredients. ‘
9. Simmer for 5 minutes.
10. Serve.
