Ingredients:
Rice – 1/2 cup
Green Moong Dal – 1/2 cup
Ghee – 3 tblsp
Black Peppercorns – 1 tsp
Cloves – 3 to 4
Ginger – 1/2 inch piece, crushed
Salt – 1 tsp
Method:
1. Wash rice and dal and soak in water for 15 minutes.
2. Heat 2 tblsp ghee in a heavy based pan over moderate heat.
3. Add whole spices and ginger and fry for a minute.
4. Drain rice and dal and add to pan with salt.
5. Stir till rice turns translucent.
6. Pour in 2 cups of water and mix gently.
7. Cover pan and put a weight on the lid.
8. Steam cook for 10 to 15 minutes till water is absorbed and rice and dal are tender.
9. Remove pan from heat and leave covered for 5 minutes.
10. Sprinkle 1 tblsp of hot ghee over khichdi.
11. Serve hot.
