Radish Foogath

Ingredients:
Radish – 3, medium
Onion – 1, medium, chopped
Gram Flour – 2 tblsp
Coriander Leaves – 1 tblsp, chopped
Green Chillies – 3 slit
Turmeric Powder – 1/4 tsp
Oil – 1/2 tblsp
Salt to taste

Grind to Paste:
Coconut Gratings – 2 tblsp
Ginger – 1/2 inch piece
Garlic Cloves – 2

For Seasoning:
Oil – 1 1/2 tblsp
Mustard Seeds – 1/2 tsp
Cloves – 2
Cinnamon – 1/2 inch piece
Curry Leaf – 1 sprig

Method:
1. Scrape and cut radish into quarters.
2. Fry gram flour in 1/2 tblsp oil to golden brown and set aside.
3. Heat rest of the oil, add seasonings and when done, add curry leaves, green chillies and onions along with turmeric powder.
4. Fry till onions turn brown.
5. Add radish, fry for 1 to 2 minutes on low heat.
6. Add ground paste, stir fry for a while.
7. Add salt, sprinkle some water.
8. Cover and cook till radish has turned soft.
9. Add fried gram flour, fry till vegetable is almost dry.
10. Sprinkle chopped coriander leaves, mix and remove.
11. Serve with rotis.
