A rich Indian dessert that makes humble dates into a luxurious pudding. This creamy payasam combines the natural sweetness of dates with warm cardamom and roasted nuts, simmered in milk until thick and velvety. Ready in under 30 minutes, it offers traditional flavors in a modern, easy-to-make format.

Dates Payasam brings together the caramel-like sweetness of dates with rich milk and aromatic cardamom. I make this version often at home. The gentle cooking process allows the dates to slowly melt into the milk, creating a naturally sweet dessert without added sugar. When the weather turns cool, I often make this comforting dessert using my heavy-bottomed copper pan.

About the Recipe

This payasam adapts the traditional Indian kheer by using dates as the main sweetener. The dates break down during cooking to create a naturally thick consistency, while roasted cashews and raisins add welcome texture. It requires minimal ingredients and basic cooking skills, making it ideal for both beginners and experienced cooks.

Why you will love this recipe

The natural sweetness of dates eliminates the need for added sugar, creating a dessert that tastes indulgent yet wholesome. The slow cooking process requires little hands-on time – just occasional stirring as the milk reduces. The aroma of cardamom fills the kitchen as it cooks, and the final dish can be served warm or chilled, making it versatile for any season.

Cooking Tips

Use whole fat milk for the creamiest texture. Chop the dates finely to help them dissolve more easily. Keep the flame low while reducing the milk to prevent scorching. Stir occasionally, especially near the end when the mixture thickens. The payasam will continue to thicken as it cools, so remove from heat while still slightly fluid.

Serving and Storing Suggestions

Serves 4-6 people. Preparation time is 30 minutes. Serve warm or chilled in small bowls. Store refrigerated for up to 3 days in an airtight container. The payasam will thicken when chilled – thin with warm milk if desired before serving.

Frequently Asked Questions

Can I use dairy-free milk alternatives?

Yes, you can substitute with almond or coconut milk. The texture will be slightly different but still delicious. Adjust cooking time as plant-based milk typically thickens faster.

How do I prevent the milk from curdling?

Use medium-low heat and stir continuously while cooking. Adding warm milk rather than cold helps prevent curdling. Never add cold milk to hot dates mixture.

Can I make this ahead for parties?

Yes, prepare up to 24 hours in advance and store in the refrigerator. Warm gently before serving or serve chilled. Add roasted nuts just before serving to maintain their crunch.
