Thai Stir-Fried Chicken Recipe

A delicious and tasty Thai style stir-fry dish with chicken. Ideal for lunch or dinner.
Thai Stir-Fried Chicken

Ingredients:
Chicken – 300 gms, chopped, boneless, skinless
Sambar Onions (Shallots) – 1 to 2, sliced
Garlic – 2 cloves, finely chopped
Fish Sauce – 1/2 tblsp
Soy Sauce – 1/2 tblsp
Oyster Sauce – 1/2 tblsp
Juice and Zest of 1/2 Lime
Coriander Leaves – 1/4 cup, chopped
Mint Leaves – 1/4 cup, chopped
Red Chilli – 1, small, sliced
Sea Salt – 1/4 tsp
Rice – 2 tsp
Oil – 3 tsp

Optional:
Green Beans – 1/4 cup, sliced
Basil Leaves – 3 tblsp, chopped
Cashewnuts – 2 to 3 tblsp, chopped, for garnish

Method:
1. Dry roast the rice until golden and remove.
2. Allow it to cool.
3. Once cooled, grind it coarsely and keep aside.
4. Heat oil in a pan over medium flame.
5. Add the chicken pieces and onions.
6. Stir-fry for 5 minutes or until the onions are browned.
7. Add garlic, salt and cook for 3 more minutes or until the chicken is cooked through.
8. Add the fish sauce, soy sauce, oyster sauce, lime juice and grated lime zest.
9. Mix well.
10. Add the coriander leaves and mint leaves.
11. Add the red chillies and ground rice.
12. Mix well and remove after a minute.
13. Serve with rice or noodles.
