Vegetable Kootu Recipe

3/4 cup toovar dal
1/2 teaspoon turmeric powder
3 tablespoons grated coconut
500 gm any one of the following vegetables or a mixtures of ones available:- Brinjal (eggplant), ash gourd, snake gourd, beans, green banana.
Tamarind juice (optional)
Salt to taste

Fry in 1 teaspoon oil and grind with coconut
1/2 tablespoon black gram
3-4 red chillies
1/4 teaspoon asafoetida

1 teaspoon oil
1/2 teaspoon mustard seeds
1 teaspoon black gram
1 sprig curry leaf

1. Boil the dal with 1/4 teaspoon of turmeric, and set aside.
2. Wash and cut the vegetables into small pieces. Boil with 1/4 teaspoon turmeric, and some salt. Set aside.
3. Mix together the boiled dal, cooked vegetables and ground paste. Add some water if too thick and simmer for a few minutes. Add a little tamarind juice to the mixture, if desired.
4. Heat the oil, and when hot add the mustard seeds, black gram and curry leaf. Pour the seasonings into the kootu.
Serve Hot
