Spinach Kadhi

Ingredients:
1 cup curd
3 cups water
1 1/2 tbsp gram flour
a small bunch of spinach
a pinch of turmeric
salt to taste
2 tsp oil
2 tsp ghee
1/2 tsp sugar

Seasonings
a pinch of asafoetida
1/4 tsp cumin seeds
1/4 tsp fenugreek seeds
1-2 red chillies
a pinch of garam masala
a pinch of pepper powder

For the masala paste
1 green chilly
a small piece of ginger (1/4 of an inch)
2-3 garlic cloves
1 small onion

Method:
1. Boil the spinach with salt. Cool and grind to a paste with the masalas given.
2. Beat the curd with water. Add some salt, turmeric powder, gram flour and sugar, and mix thoroughly.
3. Heat the oil and season with the ingredients given, except the garam masala and pepper. Add the cooked spinach and fry for a minute or two.
4. Add the buttermilk mixture, simmer for a while and remove from fire.
5. Before serving, heat the ghee, add the pepper and garam masala powders and stir for one minute. Pour into the kadhi and mix.
