Garlic Baby Potatoes


Garlic Baby Potatoes

Baby Potatoes – 12 to 15, halved
Olive Oil – 1/4 cup
Garlic – 5 to 6 cloves, minced
Oregano – 2 tblsp, finely chopped
Balsamic Vinegar – 1 tblsp
Salt as per taste
Paprika – 1 tsp
Black Pepper Powder – 1/4 tsp
Lemon Juice – 1/4 tsp
Coriander Leaves – few, finely chopped

1. Combine the olive oil, garlic, oregano, vinegar, paprika, lemon juice, pepper powder and salt in a bowl.
2. Add the potatoes and toss well.
3. Heat a non-stick pan over medium flame.
4. Add the potatoes (with the garlic mixture) to the pan.
5. Stir-fry for 20 to 30 minutes or until potatoes are tender.
6. Remove and transfer to a serving bowl.
7. Garnish with coriander leaves and serve.
