Baby Corn Potato Gravy Recipe

Ingredients:
Baby Corn - 6
Onion - 3, chopped
Red Chillies - 3
Green Chillies - 4
Tomatoes - 2. chopped
Ginger Garlic Paste - 2 tsp
Potatoes - 5, boiled and mashed
Peas - 1 cup
Oil
Mustard Seeds - 1 tsp
Urad Dal - 1 tsp
Turmeric Powder - 1 tsp
Salt as per taste
Coriander Leaves - little
Lime Juice - 1/2 cup (optional)

Method:
1. Boil the baby corn and keep aside.
2. Heat oil in a pan.
3. Add mustard seeds, urad dal and 2 red chillies.
4. Fry for 10 seconds.
5. Add the ginger garlic paste and continue frying for 30 to 45 seconds.
6. Add onions, turmeric powder and tomatoes.
7. Let it boil.
8. Add finely chopped green chillies.
9. Simmer for a few minutes.
10. Add boiled baby corn and mashed potatoes.
11. Add little water and salt.
12. Let it boil to a fine gravy consistency.
13. Garnish with coriander leaves. Add lime juice if required.
14. Serve hot with chapati, poori, idli or dosa.
