Coconut Milk Veg Biryani Recipe

A simple and flavourful veg biryani with coconut milk.
Coconut Milk
Ingredients:
Basmati Rice – 250 gms, soaked for 15 minutes
Coconut Milk – 1 1/2 cups
Curd – 3 tsp
Ginger Garlic Paste – 1 tsp
Green Chillies – 2, finely chopped
Onion – 1, finely chopped
Cinnamon – 1
Cardamom – 1
Bay Leaf – 1
Clove – 1
Mint Leaves – handful, chopped
Oil – 3 tsp
Ghee – 2 tsp
Salt as per taste

Method:
1. Heat oil and ghee in a pan over medium flame.
2. Saute the cinnmon, cardamom, bay leaf and clove for 30 seconds.
3. Add the onions, green chilles and stir-fry for a minute.
4. Now add the ginger garlic paste and mint leaves.
5. Stir well.
6. Add curd and salt.
7. Mix well and then pour the coconut milk in.
8. Add 1/2 cup of water and mix well.
9. Bring to a boil and add the rice.
10. Cook, covered, till the rice is done.
11. Remove and serve hot.

    You can use standard Britannia cheese that you get in the super market.
